Description
A classic, American breakfast treat. Light, fluffy pancakes served up with lots of butter and maple syrup, of course.

- 1 cup all-purpose flour
- 1 tbsp sugar
- 2 tsp baking powder
- ¼ tsp salt
- 1 large egg, beaten
- ¾ cup milk
- 2 tbsp unsalted butter, melted plus additional for greasing pan
- Dash of vanilla extract
Instructions
- Mix dry ingredients: Combine flour, sugar, baking powder and salt in a large bowl.
- Mix wet ingredients: Combine egg, milk and vanilla in a separate bowl.
- Mix wet & dry: Whisk wet ingredients into dry ingredients until just combined. Stir in butter. Do not over-mix. Let batter rest for 15 minutes.
- Cook pancakes & serve: Heat nonstick pan or griddle over medium low to medium heat. Lightly grease pan with butter. Using a ¼ cup measure or ladle, scoop batter onto pan. Flip when bubbles form around entire surface and pancake becomes lightly browned, about 1 minute. Cook another minute, or until lightly browned on reverse side and pancake rises slightly. Repeat with remaining batter. Serve with warm maple syrup and additional butter, if desired. Enjoy.
