Description
These cupcakes are rich, moist and so delicious. Everyone needs a go-to chocolate cake recipe if you ask me. I prefer cupcakes for their perfect individual size.
Ingredients
Cupcakes:
- 1 cup flour
- ½ cup cocoa powder
- ¾ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 stick unsalted butter, softened at room temperature
- 1 cup sugar
- 1 large egg plus 1 egg yolk, at room temperature
- 1 tsp vanilla extract
- ¾ cup brewed coffee, cooled
Frosting:
- 3 cup powdered sugar
- ¾ cup cocoa powder
- Pinch of salt
- 1 stick unsalted butter, softened at room temperature
- ¼ cup plus 2 tbsp heavy cream
- 1 tsp vanilla extract
Instructions
- Heat oven & prep pan: Preheat oven to 350°F. Line a cupcake tin with liners.
- Mix dry ingredients: Sift together flour, cocoa, baking powder, baking soda and salt in a large bowl.
- Mix wet ingredients: Using an electric mixer, beat together butter and sugar until pale and fluffy, about 3-5 minutes over medium speed. Stir in eggs in 2 additions. Stir in vanilla.
- Mix wet & dry: Alternately add dry ingredients and coffee to butter mixture, making sure not to over-mix.
- Bake: Divide batter evenly among prepared muffin cups. Bake 18-22 minutes or until a toothpick inserted into the center comes out clean. Allow to cool for 10 minutes, remove from tin, and allow to cool completely on a wire rack.
- Make frosting: While cupcakes cool, sift together sugar, cocoa and salt. Beat butter with dry ingredients, adding a couple tablespoons of cream at a time. Stir in vanilla. Transfer frosting to a piping bag with a star tip.
- Frost & serve: After cupcakes are cooled, pipe frosting in a circular pattern, working from the outside inwards. After reaching the center of the cupcake, gently push down and lift piping bag to create the tip of the design. Repeat with remaining cupcakes. Enjoy.
