Apple Almond Cake

Why you should try this:

This German Apple Almond Cake is rich, moist, loaded with apples and flavored with almond paste and extract. It’s fairly simple to make, and quite a stunner.

Ingredients:

apples, flour, cornstarch, baking powder, butter, almond paste, eggs, sugar, lemon juice, orange zest, cinnamon, salt vanilla, almond extract, apricot jam

STEP ONE:

Beat together grated almond paste and sugar in a stand mixer on medium speed until homogenous.

STEP TWO:

Whisk together the all purpose flour, cornstarch, cinnamon, salt, and baking powder in a bowl.

STEP THREE:

Drizzle in melted butter into the almond paste mixture while blending. Add eggs one at a time. Add extracts and zest.

STEP FOUR:

Slice 2 apples and chop 2 apples. Combine wet and dry ingredients. Fold chopped apples in the batter.

STEP FIVE:

Transfer batter to springform pan. Top with sliced apples in a concentric circle pattern. Bake in preheated oven for 1hr, 10 mins.

STEP SIX:

Brush the top with apricot jam while warm. Remove sides of pan and allow to cool completely before serving.
