Beat together grated almond paste and sugar in a stand mixer on medium speed until homogenous.
Whisk together the all purpose flour, cornstarch, cinnamon, salt, and baking powder in a bowl.
Drizzle in melted butter into the almond paste mixture while blending. Add eggs one at a time. Add extracts and zest.
Slice 2 apples and chop 2 apples. Combine wet and dry ingredients. Fold chopped apples in the batter.
Transfer batter to springform pan. Top with sliced apples in a concentric circle pattern. Bake in preheated oven for 1hr, 10 mins.
Brush the top with apricot jam while warm. Remove sides of pan and allow to cool completely before serving.
