Apple, Walnut and Blue Cheese Salad

Why you should try this:

This Apple, Walnut and Blue Cheese Salad is simple, yet special. Baby kale and glazed walnuts definitely take this salad up a notch.

Preheat the oven to 375F. Toast the nuts over the stovetop in a pan with butter. Stir in maple. Bring to a simmer and cook 3 minutes. Transfer to a baking sheet and bake until crispy.

STEP 1:

While the nuts are toasting, clean and dry the kale. If using mature kale instead of baby kale, remove the stems and chop into thin pieces. 

STEP 2:

Core and slice the apples. Toss in lemon juice to prevent browning if desired. Whisk together the balsamic, olive oil, lemon juice and maple for the dressing. Season with salt.
