Bucatini All’Amatriciana
WITH FRESH TOMATOES
Bucatini All’Amatriciana is a classic Roman pasta dish, and certainly a favorite in our house. This dish was taught to me from a chef from Rome, the best ex-boss I’ll ever have.
Ingredients
Crisp up guanciale

Add guanciale (or pancetta or bacon) to a large skillet and crisp over medium heat for about 10-12 minutes.
Add tomatoes

Add hot red pepper flakes and fresh tomatoes. Season with salt.
Cook down sauce

Cook tomatoes until they break down and become saucey.
Add pasta

Add al dente pasta to sauce and toss to coat. Add pecorino cheese off heat and toss to combine. Mangia!
