Chocolate Crinkle Cookies

Why you should try this:

Chocolate Crinkle Cookies deserve a spot on your Christmas table. They’re crispy on the outside and brownie-like on inside.

Sift together flour, cocoa, instant coffee, baking soda and salt into a bowl. Whisk to thoroughly combine.

STEP 1:

Whip together softened butter, white sugar and brown sugar over medium speed in a stand mixer for 3 minutes, until fluffy.

STEP 2:

Beat in eggs one at a time until fully incorporated. Stir in vanilla. Scrape down sides of bowl. 

STEP 3:

Mix dry ingredients into wet ingredients over low speed, in 2-3 additions. Do not overmix or cookies may become tough.

STEP 4:

Scoop tablespoon-sized portions of dough and roll into balls. Roll into granulated sugar, then into powdered sugar. Place on lined baking sheet.

STEP 5:

Bake in 350F oven for about 8-10 minutes, until cooked through. Cool for 5 minutes. Then transfer to a wire rack to cool completely (or eat a few while they're still warm!).
