Add oil to pan, followed by chicken. Brown on all sides, flipping occasionally, for a total of approximately 12-16 minutes. Remove from pan and set aside.
Add butter and onions to pot. Cook 10 minutes or until well-softened. Add aromatics and spices. Toast 30 seconds.
Add chicken back to pot. Pour in coconut milk and broth. Simmer about 45-60 minutes or until chicken is cooked through and tender.
