Coconut Curry Chicken Legs

Coconut Curry Chicken Legs is a creamy, comforting dish that you can put together with easy-to-find ingredients. The rich coconut milk balances out the spices to create something truly delicious.

– vegetable oil – chicken legs  – butter – onions – garlic – ginger –lemongrass  – curry powder – chili powder – coconut milk – chicken broth

Ingredients

Brown chicken:

Add oil to pan, followed by chicken. Brown on all sides, flipping occasionally, for a total of approximately 12-16 minutes. Remove from pan and set aside.

Cook onions:

Add butter and onions to pot. Cook 10 minutes or until well-softened. Add aromatics and spices. Toast 30 seconds.

Add liquids & braise:

Add chicken back to pot. Pour in coconut milk and broth. Simmer about 45-60 minutes or until chicken is cooked through and tender.
