Green Pea Soup

WITH PANCETTA AND CROUTONS

This Creamy Green Pea Soup requires only three basic ingredients for the soup base, and is actually both vegan and gluten free without the toppings. I like croutons, pancetta, yogurt and fresh peas.

Ingredients

Sauté onions

Cook onions low and slow in a generous amount of olive oil.

Add peas

Add peas to pan. 

Add water

Add water and bring to a boil. Transfer to a blender.

Blend soup

Blend soup until smooth. Serve chilled or warm.

Top and serve

Top with pancetta, croutons, yogurt and fresh peas, if desired. Enjoy!
