Easy Fig and Almond Cake

This Fig and Almond cake is so delicious and easy to make. If you’re a fan of almonds, you’ll get a double dose from the flour and extract.

Why you should try this:

Ingredients:

fresh figs, almond flour, all purpose flour, baking powder, salt, butter, sugar, eggs, orange zest, vanilla extract, almond extract

STEP ONE:

Grease a 9-inch tart pan with butter or nonstick spray. You can also use a round or square cake pan. Preheat oven to 350F.

STEP TWO:

In a large bowl, whisk together the almond flour, all purpose flour, baking powder and salt until evenly mixed.

STEP THREE:

Cream together butter and sugar until pale and fluffy, 3-5 minutes. Add eggs one at a time and incorporate. Stir in zest and extracts.

STEP FOUR:

Combine wet and dry ingredients and transfer to prepared pan. Top with figs. Bake 40-50 minutes or until cooked through. Glaze with jam. Cool completely.
