Gluten Free Lemon Bars
Gluten Free Lemon Bars are just as buttery and tangy as the classic recipe. I use a gluten free flour mix with xanthan gum for the perfect shortbread cookie crust.
- gluten free AP flour -powdered sugar -granulated sugar -lemon zest -salt -butter -eggs -lemon juice -baking powder
Mix ingredients for crust
Whisk together flour, sugar, lemon zest and salt. Gently toss the cubed butter into the flour mix to coat.
Using your thumb and pointer finger, pinch and rub the butter into the flour mixture until coarse crumbs form. Press into baking pan and prebake in 350F oven.
Beat together eggs, yolks and sugar until pale and creamy, about 3-5 minutes. Whisk in lemon juice. Sift in flour, baking powder and salt, and mix until just combined.
Bake on center rack of oven for approximately 20-30 minutes or until filling is just set with a slight jiggle.
