Italian Eggs Benedict brings together the classic components that we love with an Italian twist. Prosciutto cotto and buttery toasted bread pair perfectly with the eggs and sauce.

Slice bread into 1/2 inch slices. Spread with softened butter. Toast in a pan over medium heat for a minute per side.

STEP 1:

Make hollandaise. Whisk egg yolk with lemon juice and water. Cook over a double boiler and slowly whisk in butter, 1 piece at a time. Season to taste.

STEP 2:

Bring a shallow, wide pot of water to a simmer. Add vinegar. Create a 'whirlpool' in the water with the handle of a spoon. Add one egg at a time and poach for 3 minutes.
