Why you should try this:

This Kale and Apple Salad with Blue Cheese and Maple Glazed Walnuts is simple, yet special. It’s the perfect side dish or light lunch for the fall and winter months.

Preheat the oven to 375F. Toast the nuts over the stovetop in a pan with butter. Stir in maple. Bring to a simmer and cook 3 minutes. Transfer to a baking sheet and bake until crispy.

STEP 1:

While the nuts are toasting, clean and dry the kale. If using mature kale instead of baby kale, remove the stems and chop into thin pieces. 

STEP 2:

Core and slice the apples. Toss in lemon juice to prevent browning if desired. Whisk together the balsamic, olive oil, lemon juice and maple for the dressing. Season with salt.
