Miso Butter Salmon

with corn puree

Miso Butter Salmon with Corn Puree is a simple yet sophisticated dish, that comes together with little effort. The salmon also pairs well with simple steamed rice and vegetables.

Ingredients:

-salmon -corn on the cob -onion -yellow or white miso paste -extra virgin olive oil -butter -yogurt -parsley, dill and/or tarragon (optional)

STEP ONE:

Preheat oven to 425F. Combine softened butter and miso paste. Rub salmon with oil and season lightly. Place on baking sheet and rub top with miso butter.

STEP TWO:

Cook onions in a pan over medium heat until softened. Add corn and miso paste. Reserve some cooked corn for topping. Puree remaining mixture with yogurt in a blender until smooth.

STEP THREE:

Spread a spoon of the puree on serving dishes. Top with salmon. Top with whole corn and herbs, if desired. Serve a steamed vegetable, such as asparagus, on the side.
