Place the ricotta in a fine mesh strainer lined with a cheesecloth over a bowl. Weigh down and refrigerate overnight.
Combine strained ricotta, mascarpone, powdered sugar, cocoa powder and salt. Blend in a food processer to make the filling extra smooth.
Buy cannoli shells from your favorite Italian bakery or swipe for my homemade version. They're completely worth the effort!
Dip the cannoli shells in melted chocolate and chopped hazelnuts, if desired. Fill using a piping bag. Dust with powdered sugar.
