(Pasta with Peas and Italian Bacon)

Crisp pancetta in olive oil. Transfer to a bowl, reserving oil in pan.
Sauté onions for 3-5 minutes until soft and translucent.
Add peas and 1/4 cup of pasta water. Simmer about 2 minutes.
Add pasta, pancetta and additional pasta water, as needed. Simmer to reduce sauce and stir in grated cheese.
