Pasta with  Ricotta and Peas

Pasta with Ricotta and Peas is a quick and easy dish, perfect for a satisfying mid-week supper. The ricotta creates a light, creamy sauce and the peas provide the perfect, sweet bite.

Ingredients

Sauté shallot

Sauté shallot in olive oil until translucent, 3-5 minutes.

Add peas

Add peas, season and cook until just tender.

Add pasta to sauce

Add pasta, ricotta, parmesan, lemon zest and enough pasta water to bring the sauce together.

Top with a drizzle of olive oil and crack of fresh pepper, and enjoy!
