My Caprese-inspired Peach and Burrata Salad combines juicy peaches with creamy burrata cheese. Plus, there's a bonus recipe for an easy basil oil!
Why you should try this recipe!
-fresh peaches -burrata or mozzarella cheese -fresh basil -extra virgin olive oil -sugar and lemon juice (both optional) -salt
Remove cheese from fridge to come to room temp. Slice peaches and toss with sugar, lemon and salt.
Chop basil with salt finely in a food processer. Gradually stream in olive oil while blending. Strain through sieve.
Arrange macerated peaches, chunks of burrata and basil leaves on a plate. Top with oil and serve with bread, if desired.
