Slice bread into 1/2 inch slices. Spread with softened butter. Toast in a pan over medium heat for a minute per side.
Make hollandaise. Whisk egg yolk with lemon juice and water. Cook over a double boiler and slowly whisk in butter, 1 piece at a time. Season to taste.
Bring a shallow, wide pot of water to a simmer. Add vinegar. Create a 'whirlpool' in the water with the handle of a spoon. Add one egg at a time and poach for 3 minutes.
