Pumpkin Streusel Muffins

These are my ultimate Pumpkin Cheesecake Muffins! The muffins have tangy cream cheese filling, and crumbly, pecan topping.

Batter Ingredients

Topping and Filling  Ingredients

Mix dry ingredients

Whisk together flour, baking powder, baking soda, salt and spices

Mix wet ingredients

Combine sugar, eggs, oil, pumpkin, buttermilk and vanilla.

Combine wet and dry

Add dry ingredients into wet ingredients in 2-3 additions. Rest overnight for best results.

Make filling

Combine cream cheese, powder sugar, salt and vanilla.

Make topping

Combine flour, sugar, salt and cinnamon. Work in butter. Stir in pecans.

Scoop in muffin pan

Add enough batter to fill 1/4 of the way. Add 1 tablespoon of cream cheese filling.

Bake

Top with remaining batter. Sprinkle over streusel. Bake in pre-heated oven.
