Ramp Pesto Crostini

Why you should try this:

Ramp Pesto Crostini with Ricotta are a flavorful, unique appetizer for the spring season.

Make pesto: Add pine nuts to a food processor and grind. Add ramp leaves and pulse until chopped. Drizzle in olive oil. Stir in cheese, lemon zest and juice. Season with salt and pepper.

STEP 1:

Add baguette to 350F oven straight on the rack, and crisp for 5-8 minutes. Slice bread in half lengthwise. Grease griddle. Place cut side of bread down. Toast bread 2-3 minutes.

STEP 2:

Slice toasted baguette halves into 1 ½ inch wide slices. Slather on ramp pesto. Spoon over ricotta cheese. Top with black pepper, lemon zest and a drizzle of olive oil.
