The Best Pumpkin Pancakes

Why you should try this:

In my humble opinion, these are The Best Pumpkin Pancakes. These pancakes are thick, fluffy and perfectly spiced.

Ingredients:

canned pumpkin, flour, brown sugar, coconut butter, eggs, buttermilk (or substitute), spices, baking powder, salt, vanilla, chocolate chips (optional)

STEP ONE:

Whisk together all purpose flour, light brown sugar, cinnamon, nutmeg, ginger, cloves, allspice, salt and baking powder.

STEP TWO:

In another bowl, whisk together canned pumpkin, buttermilk, eggs and vanilla extract until smooth.

STEP THREE:

Add wet ingredients into bowl of dry ingredients while mixing. It's okay if it's slightly clumpy.

STEP FOUR:

Preheat nonstick pan over medium heat. Grease lightly with butter. Add a ladleful of batter. Add chocolate chips, if desired.

STEP FIVE:

Cook pancakes 1-2 minutes per side or until cooked through. Cook in batches until you use up all of the batter. Serve as desired.
