Sauté onions, celery and carrot until soft and light caramelized.
Add ground beef, pork and pancetta.
Season with salt and pepper. Brown for 6-8 minutes.
Add white wine and reduce. Add broth, milk and herbs. Slow cook for 2-3 hours.
Add pasta to sauce. Add pasta water as needed. Bring to simmer to thicken. Stir in butter.
