Cook matcha custard over stove until thickened. Strain through sieve. Chill in fridge and freeze in ice cream machine.
Mix wet ingredients. Add dry ingredients. Chill dough. Scoop on sheet trays and top with seeds. Bake and cool.
Cut out ice cream rounds with cookie cutter. Sandwich with cookies. Place in freezer to soften overnight and enjoy!
