Pina Colada sorbet makes for a simple, refreshing summer dessert. You can’t go wrong with a blend of fresh pineapple, creamy coconut milk and a splash of rum.
Ingredients

- 2 cups pineapple, cubed
- 1 cup coconut milk
- ½ cup sugar
- 2 tbsp white rum
- Pinch of salt
- Dash of coconut extract
Instructions
- Make sorbet base: Add coconut milk, sugar, rum and salt to a small sauce pan. Warm over medium heat until sugar is dissolved. Transfer coconut mixture to pineapple to a blender and pulse until smooth. Add coconut extract.
- Freeze & serve: Filter through sieve and chill 4 hours or up to overnight. Freeze using ice cream machine according to manufacturer’s instructions. Let set completely in freezer. Serve with whipped cream or desired toppings. Enjoy.
